This carefully portioned organic top sirloin roast offers the robust flavor of sirloin, best cooked medium rare like a prime rib. These are perfect for you Traeger aficionados; sirloin picks up marinade and smoke like few others due to its even grain and lack of internal barriers (it is a highly simplified meat cut--it only contains the top sirloin itself with attached sirloin cap or coulette). It comes complete with a self basting fat cap that bastes the cut as you roast it. Another advantage is a full boneless surface to caramelize and even crust in your smoker or oven to complement the deep flavor of sirloin. We like to stuff this roast with garlic cloves to take interior flavors to a new level!
