This is a non-organic 100% grass fed beef from Alderspring's pastures; specifically, this beef was summered on the wild ranges. These are some of the most botanically diverse intact grasslands in the world.
This package is comprised of an actual quarter of a beef, and can provide a savings of 40% off a la carte prices found on the webstore. This is the biggest savings we offer anywhere. This quarter is priced at $17.30 per lb.
Regular quarter beef customers probably will note that this price is a significant increase over recent months because commodity (chemically/hormone treated) beef prices at auction barns are at an all-time high. This current price we have actually matches the auction ring price after we add in our processing. All of our production costs have gone up dramatically as a result of the high cattle price.
All beef in your quarter comes cut, frozen and individually vacuum-packaged. Details on exact cuts can be found at the bottom. All beef is packaged with a simple black and white label. This is to differentiate it from our certified organic beef. Since this beef is not certified organic, we cannot use our regular label with the certified organic icon on it. The beef is aged, cut and packaged in the same way as our certified organic beef and under the same inspection standards. The only difference in packaging is in the label used.
Full disclosure statement on this particular beef: Please read! This particular steer was born and raised on Alderspring's certified organic pastures. We can't certify this steer as organic because his mother grazed some non-organic (untreated and chemical free) pasture in the beginning of her third trimester. This means the steer was 100% grass fed, given no hormones, antibiotics or GMOs and would be 100% certified organic if his mother hadn't grazed some non-organic grass for a few days of the third trimester.
Steak review, tenderness, and testing information PLEASE READ: This is a beef with moderate marbling (see ribeye photo of a sample from this beef. All quarters come with ribeyes, New Yorks, and other steaks)!
Tenderness was great at an 8.2 (tenderness of 9+ cuts with a fork; below 8.5 cuts easily with a steak knife; tenderness below 7 is where you want to be done chewing but can't).
Flavor was great at an 8.8
Marbling was light at a 7.5 out of 10. USDA would likely grade this beef as low CHOICE.
Included in each quarter beef: 30 bs of ground beef, and a minimum of 35 lbs of "mixed cuts."
Exact weights of mixed cuts are listed in each quarter beef option; you only ever pay for the exact weight you get. NOTE: BONES ARE NO LONGER INCLUDED IN QUARTERS, but when you add to cart you'll have the option to add bones separately!
Here's a general list of the "mixed cuts" you'll get:
-9+ lbs of "nice steaks" including ribeyes, new yorks, delmonicos (sometimes), tenderloins, top sirloin, skirt steaks, flatirons, flank steaks, and flap steaks.
-9+ lbs of London Broils and Sirloin Tip Kabobs.
-14+ lbs of roasts (may include briskets, eye of round, chuck roast, rump roast, tri tip. We can't guarantee which roasts you'll get, but you will get a mix of these).
-2 lbs of ribs (some quarters do not include ribs)
- 3+ lbs of stew beef
