These look like little T-bone beef steaks and come from the same tender muscle area. These little jewels of the lamb should be treated like a filet or ribeye. They are very tender and juicy, and like a great beef steak, are excellent on the grill. Don't overcook! 8-10 ounces per pack of two chops.
Note on sizing: we specify a size range (8-10 oz) because each cut varies a bit in size. We'll initially charge you for the highest weight (10 ounces), then if you get anything under that weight we'll refund you the difference after the order ships.
