These little organic grass fed beef shank steaks (aka Osso Bucos) are a vacuum packed 3/4" thick cut that has bone in the middle (marrow included) surrounded by shank meat.
They are one of our favorite cuts to use in a beef stew, as they bring the best of both worlds: a meaty exterior that breaks down wonderfully into tender stew meat, and a bone-in interior that creates incredible broth and releases all the health benefits found in bone broth. The grass fed beef shank is like the perfect stew in one little package.
Each order of osso bucos includes 2 ossos (we send two so that we compensate for small ones). These ossos are individually packaged and vacuum sealed.
To cook, simply season, then brown in the oven at around 400 degrees F. Remove from oven and place in a stock pot with about 2 inches of water, then simmer, covered, for about 3 hours before peeling the now-tender meat off the bone and adding remaining stew ingredients, then cooking til done. Some also prefer to remove the tissue between the bone and the meat, as it has a slightly rubbery texture (it's very easy to just pull out after the ossos have cooked down).
