Our testers gave the texture of this ground lamb rave reviews (not too fine, not too coarse), and everyone agreed that the taste was very mild. It has the sweetness of lamb without any of the typical wonky "gamey" flavors. Season with just salt and pepper, or try with a few sprigs of rosemary and some fresh thyme! Average leanness around 80%.
