The Alderspring grass fed skirt steak is a long, thinner steak that is an incredible performer when grilled hot and fast, as fajita meat, or rolled up into stuffed beef pinwheels. This steak is also sometimes called the "butcher steak" because it was the steak the butcher would hide away for himself! Because of the direction of the grain on this steak (it runs the short direction rather than the long direction), it is best sliced the long way for better tenderness!
This is for 2 lbs of our skirt steaks, which is about 1-3 steaks depending on the weights. Note that skirt steaks come in all shapes and sizes--some are long and skinny, while others are wider and a little thicker (see pictures). Each steak is individually vacuum packed, and as always, dry aged and 100% grass fed.
Note that this cut is not certified organic. Though it's our regular organic beef, raised on our organic pastures, and processed with organic standards, our processor is still waiting on paperwork for the official certification!
