These come from high grading the rib area--as a result, we have limited our short rib production to only the meatiest part of the rib area (it is the part adjacent to the ribeye and chuck) to create nice beefy short ribs. We love these slow roasted for a few hours until pull-off-the-bone tender. Perfect with a little barbecue sauce or a nice rub!
These are cross-cut ribs, 1.5-2" wide into groups of about 3-4 bones per cut (about 5" long). About 2 ribs per vacuum pack, but weight tends to vary a bit. We send you as many packages as it takes to reach 4 lbs (usually 2, sometimes 3 packages, for about 4-6 ribs total).
